A Little Background

A table for six on a Sunday, and a dish that can be made ahead: crespelle are the Italian crêpes, thin and pale, and they are rolled around a filling and warmed through. The sweet version here uses ricotta and jam, and the savoury kind uses spinach and cheese.

The batter is flour, eggs, milk and a little melted butter, whisked smooth and left to rest for 15 minutes so the flour swells. Pour in just enough to coat the pan and swirl it, because thick crespelle are rubbery. A non stick pan, lightly buttered for the first one only, is best. They are ready to turn when the edges lift and the surface is dry.

Mix the ricotta with a little sugar and lemon zest, spread each crespella with jam and a spoonful of ricotta, and roll. Set them in a buttered dish and bake at 180°C / 355°F for 15 minutes until warm. Dust with icing sugar. The batter keeps overnight in the fridge, which makes the whole dish easier.
