Don't Make These Mistakes

Crush the crumbs very fine. Big lumps of cookie do not soften, and the dessert loses its soil-like look.

Fold the whipped cream in gently, in two batches. It keeps the filling light and airy, and beating it in makes it heavy.

Add the worms at the last moment. In the fridge for hours they go hard and dull, and their colours run into the pudding.

  1. Crush the cookies, cream centres and all, in a food processor to fine crumbs, or seal them in a strong bag and crush them with a rolling pin.

  2. Whisk the pudding mix with the cold milk for 2 minutes and let it thicken for 5 minutes.

  3. Beat the cream cheese, butter and icing sugar until smooth. Whip the cream with the vanilla to stiff peaks and fold it into the cream cheese mixture, then fold in the pudding.

  4. Spread a third of the crumbs over the base of a 3 litre glass bowl, cover with half of the pudding mixture, then add another third of the crumbs and the rest of the pudding mixture. Finish with the remaining crumbs.

  5. Cover and refrigerate for at least 4 hours. Decorate with the gummy worms just before serving.

Why It Works

Dirt cake is a dessert for children and for the child in everyone, and it is exactly what the name says. A bowl or a new, clean flowerpot is layered with crushed chocolate sandwich cookies that look like soil, a creamy chocolate pudding and a fluffy cream cheese mixture, and the top is covered with more crumbs and decorated with gummy worms that seem to be crawling out of the earth. It has become a fixture of birthday parties, Halloween, school events and summer picnics across the United States, and it is one of the easiest desserts there is, because it needs no oven, no special skills and nothing more than a food processor or a bag and a rolling pin. The crumbs are made by crushing the cookies whole, including the cream centres, and the filling is a mix of two things. The first is chocolate pudding, made from an instant mix and cold milk, and the second is cream cheese beaten with butter and icing sugar and lightened with whipped cream. The two are folded together, so that the filling is soft, rich and mousse-like, and it sets in the fridge as the crumbs beneath soften slightly and blend into it. Use a big glass bowl so that the layers show, or make it in a clear plastic pot, and add the worms just before it is served so they stay chewy.

Storage and Reheating

Keeps covered in the fridge for up to 3 days. The crumbs soften as it stands. Do not freeze.

Swaps and Variations

  • Double cream won't whip if you swap it, but for the cooking itself, full-fat crème fraîche or a lower-fat single cream works in its place.
