  1. Bring a large pan of water to a boil. Add the frozen edamame and return to a boil.

  2. Cook for 5 minutes, until the pods are bright green and the beans are tender. Drain well and shake off the water.

  3. Tip into a bowl, sprinkle with the sea salt and toss while the pods are still hot and wet, so the salt clings. Serve with the lime wedges.

Tips for Success

  • Buy edamame in the pod from the freezer aisle; the shelled ones suit salads and stir-fries better.
  • If you prefer a gentler seasoning, use less salt and add more lime juice.
  • Serve them in a wide, shallow bowl so the pods cool quickly and are easy to pick up.

Why the Method Is What It Is

Salt goes on last. The pods are boiled plain, drained and salted while still hot and wet, so the salt clings to the outside, where your lips find it first. It takes 2 minutes of work and 5 of boiling.

Frozen edamame pods are already blanched, so they only need to be heated through; overboiling turns them grey and soft. Cook them for 5 minutes, no longer, and taste one: the beans should be tender with a little resistance. Squeeze the beans out of the pod with your teeth. Do not eat the pods.

Serve warm or at room temperature in a bowl. Pass an empty bowl for the pods. Taste one for salt before you serve the rest. Edamame are soya beans, so they bring protein and fibre as well as flavour. A squeeze of lime over the top works well, and any leftover beans, shelled, are good in a salad.

Good Alongside

Lime wedges · A bowl of miso soup · Sliced cucumber

Ingredient Swaps

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.
