How to Make Egg and Bacon Tart

  1. Heat the oven to 190°C / 375°F. Line a 23 cm tart tin with the pastry, prick the base, cover with baking paper and beans and bake for 10 minutes.

  2. Remove the paper and beans and bake for 2 minutes more.

  3. Whisk the 3 eggs with the milk, cream, salt and pepper. Scatter the bacon over the pastry and break the 4 eggs on top.

  4. Pour in the custard and scatter with the chives. Bake for 25 minutes until the white is set. Rest for 10 minutes.

Why the Method Works

Most home versions come out with a pale, soft base, and the fix is a short blind bake before anything goes in.

Press the pastry into a 23 cm tin, prick it, line it with baking paper and beans and bake at 190°C for 10 minutes. Take the paper out and give it 2 minutes more to dry. A dry base is what holds a wet custard.

Scatter the chopped bacon over the pastry and break in the eggs whole, so each yolk sits in the custard like a sun. Pour the milk and cream around them.

Bake for 25 minutes more, until the white is set and the yolks still look soft. If your oven runs hot, check at 20 minutes. Rest for 10 minutes, as the custard continues to firm. Cut it into thick slices and serve it warm with a salad, or pack it cold for a picnic.
