  1. Use a 6 cm round cutter or the rim of a glass to cut a hole in the middle of each slice of bread. Butter both sides of the bread and the cut-out circles.

  2. Heat a large non-stick frying pan over medium heat. Set the bread and the circles in the pan.

  3. Crack an egg into each hole and season with salt and pepper. Cook for 2 to 3 minutes, until the bread is golden underneath and the white has begun to set.

  4. Turn the bread and circles over carefully with a wide spatula and cook for 1 to 2 minutes for a runny yolk, or 3 minutes for a firm one.

  5. Slide onto plates, sprinkle with chives and serve with the toasted circles for dipping.

Tips for Making Egg in a Hole

  • Use medium heat. Higher heat browns the bread before the egg has set, and lower heat makes the bread greasy.
  • Butter both sides of the bread. It gives an even golden crust and stops the egg from sticking.
  • Turn it with a wide spatula and a firm hand, supporting the bread and the egg together, so that the yolk stays whole.
