Heat the oven to 200°C / 400°F (180°C / 355°F fan). Set the pepper halves cut side up in a baking dish, brush them with the olive oil and bake for 10 minutes.

Take the dish out and crack one egg into each pepper half. Season with the paprika, salt and pepper.

Bake for 15 to 18 minutes more, until the whites are set and the yolks are still soft. Check at 15 minutes if your oven runs hot.

Scatter the feta and parsley over the top and serve two halves per person.
