Heat the oven to 180°C / 355°F (160°C / 320°F fan). Brush a 12-hole muffin tin lightly with the oil.

Whisk the egg whites with the garlic powder and pepper until smooth.

Divide the bell pepper, spring onions and parsley between the 12 holes, then pour in the egg whites, filling each hole to the top.

Bake for 20 minutes, until puffed, set and lightly golden.
