Cooking Egg White French Toast

  1. Whisk the egg whites, milk, vanilla and cinnamon in a shallow dish.

  2. Heat half the oil in a large non-stick frying pan over medium heat. Dip one slice of bread in the custard for 30 seconds on each side and lay it in the pan.

  3. Spoon a quarter of the remaining custard around the slice and let it set for 1 minute. Cook for 3 to 4 minutes, then flip the toast with its lacy edge and cook for 2 minutes more, until golden.

  4. Repeat with the second slice and the remaining oil and custard.

  5. Serve with the strawberries and maple syrup.

Fifteen minutes is all it takes. White bread soaks up egg white custard quickly, and the custard is where the protein is, so the recipe uses a lot of it and not much bread. Refined white bread is also lower in potassium and phosphorus than wholegrain, which makes it the better choice here. Slices that are a day old hold the custard best.

Two slices cannot hold all the custard. Pour the extra around the bread in the hot pan. It sets into a thin, lacy edge that you flip together with the toast. Nothing is wasted, and every serving gets its full share of whites.

Keep the heat at medium. Egg whites brown fast and turn leathery if the pan is too hot. Serve the toast with strawberries and a thin drizzle of maple syrup, since the bread and the custard already carry plenty of flavour. Strawberries also add the sharp note the sweet toast needs.

Storage and Reheating
