Eggplant Pizzas
Roasted eggplant rounds topped with tomato sauce, mozzarella and basil, a pizza without dough. Four servings in 35 minutes.
Before You Start
Cut the rounds to an even thickness so they all finish together.
If your eggplant is very large and seedy, choose a smaller one; the flesh is firmer and less bitter.
Do not overload each round with sauce, or the cheese will slide off as it melts.

-
Heat the oven to 220°C / 430°F (200°C / 390°F fan) and line two baking trays with parchment paper. Lay the eggplant rounds on the trays, brush both sides with the oil and sprinkle with the salt.
-
Roast for 12 minutes, turning once, until golden and tender.
-
Mix the passata, oregano, garlic powder and pepper. Spoon a tablespoon onto each round and top with the mozzarella.
-
Bake for 8 minutes more, until the cheese has melted and begun to brown. Scatter with the basil.
Why the Method Works
A pizza night for four, with no dough. Thick rounds of eggplant roast until the edges brown, then take the sauce, cheese and oregano the way a crust would. It is pizza in spirit rather than in texture, and it is ready in 35 minutes. Each round is a small, tidy portion that is easy to share.
Eggplant holds water. It needs a head start. Roast the rounds first, on their own, until they are tender and have lost some of their moisture; topped raw, they weep into the sauce and the cheese slides off. Slice them as thick as your finger so they stay firm, and brush both sides with oil.
Use a thick, plain passata for the sauce and read the label, since some jars add sugar. Mozzarella melts best grated. Finish with torn basil once the tray is out of the oven, and serve with a crisp salad. Leftover rounds reheat well on a tray in a hot oven.
After You've Cooked It
Keeps in the fridge for up to 3 days. Reheat on a tray in a hot oven so the rounds stay firm.
If You're Missing Something
- Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
Good With
- A rocket and Parmesan salad
- Steamed green beans
- A cucumber salad
