The first smell is garlic and chilli sizzling in olive oil, and the second is the escarole hitting the pan and collapsing into the broth. Escarole is a bitter, leafy green that turns tender and mild in a hot soup. Beans give it body. Chilli flakes bring a slow warmth rather than sharp heat.

Wash the escarole well, since grit hides in the heart of the head, and chop it into wide pieces. Add it in two batches so the pot never overflows, and simmer until the ribs are tender. If the escarole is very bitter, soak the cut leaves in cold water for a few minutes first. Very little else is needed. Garlic, a pinch of chilli, oregano and good beans do the job, so season carefully at the end.

A squeeze of lemon brightens the greens and balances the bitterness. Serve in wide bowls with an extra grind of black pepper. It keeps well. The flavour deepens overnight.

Ingredient Swaps

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
  • Fresh herbs work in place of the dried oregano at roughly three times the quantity — a teaspoon of dried is about a tablespoon of fresh, chopped.
