How to Make Flatbread

  1. Mix the flour, baking powder and salt. Stir in the yogurt and oil to a soft dough and knead for 1 minute. Cover and rest for 10 minutes.

  2. Divide into 8 balls and roll each into a thin circle about 3 mm thick.

  3. Heat a dry frying pan over high heat. Cook each flatbread for 1 minute per side until puffed and spotted brown.

  4. Stack in a clean tea towel to keep warm.

Why It Works

It is the quickest bread there is: flour, yogurt, a little baking powder and salt, rolled and cooked on a hot pan in under 2 minutes each.

Mix the dough until it just comes together and knead for no more than a minute. It will be soft and a little sticky. Let it rest, covered, for 10 minutes while you heat the pan, and the dough relaxes enough to roll without springing back.

Roll each piece thin, about 3 mm. Thin flatbreads puff and blister; thick ones cook through slowly and stay doughy.

The pan must be properly hot. Cooked on medium heat, flatbread dries and turns hard. On high heat it puffs in seconds and stays soft. Stack them in a tea towel as they come off to keep them pliable. Flatbreads can be folded around a filling, torn to scoop up a stew or brushed with garlic butter as a side. They cook so quickly that the whole batch is done before the main dish is ready.
