French Bread Pizza: The Method

  1. Heat the oven to 220°C / 430°F (200°C / 390°F fan). Split the baguette lengthways and pull out a little soft crumb. Toast, cut side up, on a tray for 3 minutes.

  2. Heat the oil in a pan, cook the garlic for 30 seconds, then add the tomatoes, oregano and salt. Simmer for 8 minutes until thick.

  3. Spread the sauce over both halves, add the pepperoni and cover with the cheese.

  4. Bake for 10 minutes until the cheese is bubbling and golden. Cut each half in two.

A baguette is the perfect pizza base: long, crisp, and cheap. Split it down the length and each half becomes a boat that holds the sauce and cheese.

Pull out a little of the soft crumb from each half with your fingers, leaving the crust shell intact. There is more room for the topping, and the bread stays crisp where it touches the oven.

The sauce is a tin of chopped tomatoes reduced with garlic and oregano for 10 minutes. It should be thick enough to hold on a spoon. Thin sauce soaks straight through and leaves a soggy middle.
