  1. Grate the onion on the finest side of a box grater and crush the garlic.

  2. Put the oil, ketchup, vinegar, sugar, onion, garlic, paprika, salt and water into a clean jar with a tight lid.

  3. Screw on the lid and shake hard for 30 seconds, until the sugar has dissolved and the dressing is thick, smooth and orange.

  4. Taste on a lettuce leaf and add a pinch more salt or a splash more vinegar if you like it sharper. Shake again before you pour it over the salad, and serve it in a small jug for people to add their own.

Why the Method Is What It Is

American French dressing has almost nothing to do with France. In the nineteenth century the name simply meant a vinaigrette of oil, vinegar, salt and pepper, but over the following decades it changed into something quite different, an orange-red, sweet and tangy dressing coloured with tomato and paprika and thickened with a great deal of oil. It became the dressing of the American salad bar, of the wedge of iceberg lettuce and the plate of sliced tomato and cucumber, and it was sold in bottles in every supermarket. Making it at home takes five minutes and needs only a jar. The oil and vinegar make the base, ketchup gives the colour and the tomato flavour, sugar softens the sharpness, paprika adds warmth, and a little grated onion and garlic give it savour. It is meant to taste sweet first and tangy after, so do not be tempted to cut back the sugar too far. The proportions here make a dressing that clings to leaves without being heavy, and it is also good as a marinade for chicken, a spread on burgers and a dip for chips. It separates as it stands, which is only the oil and vinegar parting, and a hard shake puts it right.
