Heat the oil and butter in a large frying pan over medium heat, add the onions and 0.5 tsp of the salt, and cook for 10 minutes, stirring occasionally, until they are soft and pale gold.

Lower the heat to medium-low, stir in the sugar, and cook for 30 minutes more, stirring every few minutes and scraping up the brown bits, until the onions are deep golden brown and jammy.
