How to Make Fried Bologna Sandwich

  1. Cut 4 small slits, about 1 cm deep, around the edge of each bologna slice so that it stays flat as it cooks.

  2. Melt the butter in a large frying pan or skillet over medium-high heat.

  3. Fry the bologna for 2 to 3 minutes on each side, until deep golden brown with blistered, slightly crisp edges.

  4. Lay a slice of cheese over each of 2 slices of the bologna in the last 30 seconds so that it starts to melt.

  5. Meanwhile, toast the bread until golden.

  6. Spread the mayonnaise on 2 slices of toast and the mustard on the other 2. Top each mayonnaise slice with a stack of 2 slices of bologna, the cheese on top, then add pickles, lettuce and tomato if you like.

  7. Close the sandwiches with the mustard toast, press down lightly, cut in half and serve while still hot.
