Some Background

Fast-food chains made this sandwich famous, and the home version is better for two reasons: the chicken is fresher, and the crust is thicker. The key is the double dip.

Soak boneless thighs in buttermilk with salt and a spoon of hot sauce. Buttermilk tenderises the meat and gives the flour something to grip. Soak for at least 30 minutes, or overnight in the fridge for a more tender result.

Season the flour with paprika, garlic powder and pepper. Lift each thigh out, let the excess drip off, press into the flour, dip back into the buttermilk and press into the flour again. That second coat gives the craggy crust.

Fry in 2 cm of oil at 170°C for 6 minutes a side, until deep gold and cooked to 74°C in the centre. If your oil runs hot, check at 5 minutes. Drain on a rack and assemble in a toasted bun with pickles and mayonnaise.
