How to Make Fried Cornmeal Mush

  1. Whisk the cornmeal, water and salt in a saucepan until smooth. Bring to a boil over medium heat, stirring.

  2. Lower the heat and cook for 12 minutes, stirring often, until very thick.

  3. Pour into a lined 900 g loaf tin, smooth the top and chill for at least 3 hours until firm.

  4. Turn out and cut into 8 slices. Fry in the oil over medium heat for 4 minutes per side until crisp and golden. Serve with the maple syrup.
