Frozen Chocolate Banana Bites: The Method

  1. Line a tray with parchment paper. Lay the banana slices on it in a single layer.

  2. Melt the chocolate and coconut oil in a small bowl in the microwave in 30-second bursts, stirring each time, until smooth, about 90 seconds in all.

  3. Dip each slice halfway into the chocolate, or drizzle the chocolate over, and return it to the tray. Scatter with the peanuts.

  4. Freeze for at least 1 hour, until firm. Serve straight from the freezer.

Freeze for at least 1 hour, until firm. Serve them straight from the freezer. They soften quickly at room temperature. Three slices make a serving, which keeps the chocolate to a small, sweet treat, and the bites last for 1 month in a freezer bag.
