Spread the yogurt thin. A layer about a centimetre thick freezes through in two hours and snaps cleanly, while a thick one stays chewy in the middle and bends instead of breaking. Thin bark also breaks into cleaner pieces.

Plain Greek yogurt is already thick, tangy and high in protein. Keep it simple. A few drops of vanilla and a spoonful of erythritol-based sweetener take the edge off the sourness, and the toppings add the rest: raspberries and blueberries burst and bleed into the yogurt, pistachios add crunch and unsweetened coconut adds a little richness. Press the toppings in gently so they stay on when the bark is broken up.
