  1. Heat the oven to 100°C / 210°F. Brown the sausages in the oil in a large pan over medium heat for 15 minutes, turning often.

  2. After 5 minutes add the bacon, black pudding, white pudding and tomatoes cut-side down. Move finished items to a plate in the oven.

  3. Warm the beans in a small pan. Fry the mushrooms in the pan juices with the butter for 4 minutes.

  4. Fry the eggs for 3 minutes. Fry the soda bread in the remaining fat until crisp.

  5. Divide everything between four warm plates.

Why the Method Works

A fry-up is a timing problem: eight things need to finish together on four plates. The order below solves it.

Start with the sausages, which take the longest. Brown them in a little oil over medium heat for 15 minutes, turning often. Cook everything in the same pan. The fat from the sausages and bacon is what flavours the mushrooms, the puddings and the bread.

Add the bacon and the black and white pudding slices after 5 minutes, and the halved tomatoes cut-side down. Move everything to one side as it finishes and keep it warm in a low oven.

Fry the mushrooms in the pan juices, warm the beans in a small pan, and finish with the eggs. Each takes under 4 minutes. Fry the soda bread in the last of the fat until crisp. If your hob runs hot, check the sausages at 12 minutes. Brown sauce and a pot of strong tea on the table finish the meal in the traditional way.

After You've Cooked It

Best eaten at once. Leftover sausages keep in the fridge for 2 days.
