Why It Works
Gammon is cured pork, and it already tastes of a day in the salt and smoke. That makes it one of the easiest cuts to cook, with nothing to season and no need for a sauce.
Snip the rind at 2 cm intervals so the steak does not curl as the fat shrinks. Pat it dry and fry in a little oil over medium heat for 5 minutes a side. Stand it on its fat edge for the last minute to crisp and brown it.
Fry the pineapple rings in the same pan for 2 minutes a side so they caramelise, and fry the eggs in a second pan, with the whites set and the yolks soft.
If your pan runs hot, check the steak at 4 minutes. It is cooked when the meat is pale pink all through, with no raw look. Serve with chips, or with peas and mustard on the side, and let the egg yolk run into the meat.
