Cook the penne in a large pan of unsalted boiling water for 10 minutes, until just tender. Save a mugful (about 250 ml) of the cooking water, then drain.

Meanwhile, heat half the oil in a large frying pan over medium-high heat. Cook the chicken for 6 minutes, until golden and cooked through. Tip onto a plate.

Lower the heat, add the remaining oil and the garlic and cook for 1 minute, until pale gold. Add the oregano, chilli flakes and pepper.

Return the chicken and pasta to the pan with the lemon juice and a splash of the pasta water. Toss for 1 minute, adding more water as needed. Stir in the parsley.

Keep a mugful of the pasta water. It carries starch from the pasta, and a splash turns olive oil and garlic into a sauce that coats every piece, with no butter or cheese. Reserve more than you think you need.
Pasta water is usually salted. Here it is not, and the garlic, lemon, oregano and chilli have to carry the dish. Sliced garlic, not minced, because thin slices turn golden and sweet in the oil, while minced garlic burns. Cook it for only about a minute. Chilli flakes are optional; use as much or as little as you like.
Penne is refined pasta, which is lighter in potassium and phosphorus than wholewheat. Chicken goes in in small pieces so that it cooks in the time the pasta takes to boil. Toss everything together in the pan, not the colander, so that the sauce clings. Work fast at the end. Finish with parsley and a squeeze of lemon. Taste before serving and add more lemon if the dish needs it.
