Chicken skewers usually come off the grill dry. The fix is a short marinade, even cubes and a hot grill. Cut the chicken into pieces of the same size, about 3 cm, so that every cube finishes together instead of leaving some raw and others like chalk.

Lemon juice and olive oil carry the garlic and herbs into the meat, but acid works fast. Marinate for 20 minutes, no longer, because after that the surface turns mealy. Thread the chicken with the pepper and onion, leaving a little space between the pieces so that the heat reaches all sides. Turn the skewers every 3 minutes.

There is no salt in the marinade. Garlic, oregano, thyme and parsley carry it, and the char from the grill adds a savoury edge of its own. Serve the skewers with rice and a cucumber salad, or slide the chicken off the sticks onto a bed of rice.

  1. Whisk the oil, lemon juice, garlic, oregano, thyme, parsley and pepper in a bowl. Add the chicken and toss to coat. Marinate for 20 minutes.

  2. Heat a grill or griddle pan to medium-high. If you are using wooden skewers, soak them in water while the chicken marinates.
