How to Make Gimlet

Tap a step to highlight it, or turn on Cook Mode for large type and step-by-step focus.

  1. Chill a coupe or cocktail glass in the freezer for 5 minutes, or fill it with ice water while you make the drink.

  2. Fill a cocktail shaker with ice. Add the gin, lime juice and sugar syrup.

  3. Shake hard for 12 to 15 seconds, until the shaker is very cold.

  4. Tip the ice water out of the glass and strain the drink into it through a fine strainer.

  5. Float the lime wheel on top and serve at once.

Tips for Making Gimlet

  • Squeeze the lime juice just before you mix. Fresh juice tastes bright and clean, and bottled juice is dull and slightly bitter.
  • For the old-fashioned version, replace the lime juice and syrup with 30 ml of lime cordial and shake with the gin.
  • Shake with plenty of ice for a full 12 seconds. The dilution is part of the recipe, and a drink that is not shaken enough tastes harsh.

Common Substitutions & Variations

  • Lemon is the everyday swap for lime in this kind of dish — the acidity plays the same role even though the flavour is not identical.

What to Serve with Gimlet

  • Smoked salmon canapés
  • Oysters
  • Salted almonds

Storing & Reheating Gimlet

Best made to order. For a party, mix the gin, lime juice and syrup in a jug and keep it in the fridge for a few hours, then shake each drink with plenty of ice.
