  1. Heat the oil in a large pot over medium heat and cook the onion for 6 minutes, until soft. Add the garlic, curry powder and turmeric and cook for 1 minute.

  2. Add the tomatoes and tomato paste and cook for 8 minutes, until the tomatoes have broken down into a sauce.

  3. Add the potatoes, carrots and stock, bring to a boil, then cover and simmer for 15 minutes.

  4. Stir in the beans and sweetcorn and simmer, uncovered, for 15 minutes, until the potatoes are tender and the stew is thick.

  5. Season with the salt, stir in the coriander and serve hot.

  • Mash a few of the beans against the side of the pot. It thickens the stew.
  • Cook the tomatoes down into a sauce before adding the liquid.
  • Use dried beans and maize if you have them. Soak overnight and simmer for 1 to 2 hours first.

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
