  1. Stir the yogurt, milk and lemon juice together in a bowl until smooth.

  2. Add the garlic, dill, chives, parsley, onion powder, garlic powder, salt and pepper and stir well.

  3. Cover and chill for 30 minutes so the flavours settle. Taste, adjust the seasoning, and thin with a little more milk if you like.

Worth Knowing

  • Grate the garlic finely, or it will bite in hard little pieces.
  • If the dip is too tart, add a pinch more salt before reaching for anything sweet.
  • Use a whisk to loosen thick Greek yogurt before adding the herbs.

Why the Method Is What It Is

Make it ahead. Ranch tastes flat when it is stirred together and eaten at once, and rounder after 30 minutes in the fridge, once the garlic and herbs have worked into the yogurt. Use the time to chop the vegetables for dipping.

Greek yogurt gives the body and tang that buttermilk and mayonnaise usually supply, with far less fat and no added sugar. Use plain, unsweetened yogurt: a flavoured one ruins it. Thin it with milk. Add a spoonful at a time until it is as thick or loose as you like; a thick version suits vegetable sticks and a thinner one suits a salad.

Fresh herbs make it taste like ranch; dried ones only get you close. Serve with raw vegetables such as celery, cucumber, bell pepper and radish. Keep it covered in the fridge. It thickens as it stands. A spoonful is also good stirred into a salad as a dressing. Taste before serving and add salt in small pinches.

What to Put Next to It

Celery sticks · Sliced bell peppers · Radishes

Ingredient Swaps

  • An eighth of a teaspoon of garlic powder per clove is the usual stand-in when you are out of fresh garlic — it will not caramelise the same way, but it carries the flavour.
