The Method for Grilled Peaches

  1. Heat the grill to medium and oil the rack well. Mix the butter, honey and cinnamon and brush over the cut sides of the peaches.

  2. Grill the peaches cut side down for 6 minutes without moving them, until marked and caramelised.

  3. Turn and grill the skin sides for 2 minutes more.

  4. Serve warm with the ice cream and pecans, drizzled with any remaining honey butter.

A Little Background

Fruit on the grill turns into a different thing. The heat caramelises the sugars on the cut face and softens the flesh until it is almost a jam, while the skin keeps everything together.

Choose peaches that are ripe but still firm. Soft ones fall apart on the rack, and hard ones stay sour. Halve them and remove the stones, and brush the cut sides with melted butter and honey. The fat is what stops the fruit sticking.
