Guinness Beef Stew: The Method

  1. Toss the beef with the flour, salt and pepper. Heat the oil in a large pot and brown the beef in 3 batches for 4 minutes each. Remove.

  2. Cook the onions and carrots in the same pot for 6 minutes. Add the garlic and tomato purée for 1 minute.

  3. Pour in half of the Guinness and boil for 3 minutes, scraping the base. Add the rest, the stock, thyme, bay leaf and beef.

  4. Cover with the lid slightly ajar and simmer very gently for 1 hour 50 minutes, stirring occasionally.

  5. Add the potatoes and simmer for 40 minutes more until everything is tender. Stir in the sugar, remove the bay leaf and serve.

Worth Knowing

  • Brown the beef in batches for a deep crust.
  • Keep the simmer very gentle.
  • Add the potatoes late so they hold together.

Behind the Recipe

This is what to make in the first cold week, when the oven feels like a treat and the kitchen windows steam up. Beef and stout is a pairing from Irish cooking, and the Guinness gives the gravy a dark, slightly bitter edge that balances the sweetness of the carrots and onions.

Brown the beef properly. Dry the cubes with kitchen paper, toss them in seasoned flour, and fry them in batches so the pan never cools. A deep brown crust is where most of the flavour of the stew comes from, and the flour on the surface thickens the gravy as it simmers.

Add the Guinness in two stages. Pour in half and let it bubble down by a third, scraping the base of the pan, to cook off the raw bitterness. Then add the stock and the rest of the stout. A stew that gets all its stout at once can taste harsh.

Simmer very gently, with the lid slightly ajar, for 2 hours 30 minutes. The potatoes go in for the last 40 minutes so they hold their shape. A spoonful of tomato purée and a teaspoon of sugar round out the flavour at the end.

Good Alongside

Soda bread · Buttered cabbage · Mashed potatoes · Irish butter

Swaps and Variations

  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
