  1. Heat the oil in a large pot over medium heat. Cook the onion, carrots and celery for 6 minutes, until soft. Add the garlic and thyme and cook for 1 minute.

  2. Add the stock and chicken and bring to a simmer. Cook gently for 15 minutes, until the chicken is cooked through. Lift it out and shred it with two forks.

  3. Add the beans to the pot and simmer for 8 minutes, mashing a few against the side. Add the kale and simmer for 5 minutes, until tender.

  4. Return the chicken to the pot. Season with the salt, pepper and lemon juice and serve hot.
