Put the ginger, sugar and water in a saucepan, bring to the boil, and simmer for 15 minutes, stirring to dissolve the sugar.

Take the pan off the heat and leave the syrup to steep for 1 hour, until it has cooled and the ginger flavour is strong.

Strain through a fine sieve into a jug, pressing the ginger with the back of a spoon to extract all of the juice. Stir in the lemon juice and chill.

For each glass, pour 90 ml of the syrup over ice and top with about 200 ml of sparkling water.
