  1. Mix the flour, yeast, salt and sugar in a large bowl, add the warm milk and softened butter, and stir to a shaggy dough.

  2. Knead on a lightly floured surface for 10 minutes, until smooth and elastic. Put the dough in an oiled bowl, cover, and leave to rise for 1 hour, until doubled.

  3. Grease a 23 x 13 cm loaf tin. Press the dough out on a floured surface to a rectangle about 23 x 30 cm, roll it up tightly, pinch the seam and ends, and set it seam side down in the tin.

  4. Cover and leave to rise for 45 minutes, until the dough is about 2.5 cm above the rim.

  5. Heat the oven to 190°C / 375°F and bake the loaf for 30 to 35 minutes, until deep golden and hollow-sounding when tapped underneath.

  6. Brush the top with the melted butter, turn the loaf out, and cool on a wire rack for at least 1 hour before slicing.
