Heat the milk, half of the cream, the vanilla pod and seeds and half the sugar in a medium saucepan over medium heat until steaming and just below a simmer.

Whisk the egg yolks, remaining sugar and salt in a large bowl until pale and thick.

Slowly pour the hot milk over the yolks, whisking constantly, then pour it all back into the pan.

Cook over low heat, stirring constantly with a wooden spoon, for 5 to 6 minutes, until the custard reaches 80°C / 176°F and coats the back of the spoon.
