How to Cook Honey Cake

  1. Heat the oven to 170°C / 340°F and line a 900 g loaf tin.

  2. Whisk the eggs and sugar for 3 minutes until pale. Whisk in the honey, oil and hot tea.

  3. Sift in the flour, baking powder, bicarbonate and spices and whisk until smooth. The batter will be thin.

  4. Pour into the tin and bake for 50 minutes until a skewer comes out clean. Cool completely.
