Making Honey Garlic Pork Chops

  1. Pat the chops dry and season with salt and pepper. Heat the oil in a large frying pan over medium-high heat and sear for 4 minutes per side. Lift out and rest.

  2. Lower the heat to medium. Add the garlic and cook for 30 seconds.

  3. Stir in the honey, soy sauce, vinegar and water and simmer for 3 minutes until the sauce coats a spoon.

  4. Return the chops and any juices to the pan and turn in the glaze for 1 minute. Serve with the sauce spooned over.

It looks like a stir-fry sauce and behaves like a caramel, which is why the pan has to be watched. Honey burns fast, so the glaze goes in only after the chops are cooked.

Sear them first, 4 minutes per side, then take them out. The sauce simmers in the same pan and picks up the browned bits.

The sauce is ready when it coats the back of a spoon, about 3 minutes. Do not walk away. Thick honey goes from glossy to burnt in seconds.

Return the chops for the last minute and turn them in the glaze. They take on a sticky shine, and the sauce clings instead of running off. Ginger grated into the glaze changes the flavour without adding work. Because the glaze is sticky, soak the pan straight after serving, since it sets hard as it cools and is far harder to clean the next morning.
