Method

  1. Heat the oven to 150°C / 300°F and set 12 paper patty cases in a muffin tin.

  2. Melt the butter, sugar and honey in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a boil and boil for 1 minute.

  3. Put the cornflakes in a large bowl, pour over the syrup and turn gently with a spoon until evenly coated.

  4. Spoon into the cases, dividing evenly, without pressing down.

  5. Bake for 8 to 10 minutes, until the syrup is bubbling and the flakes are golden.

  6. Cool completely in the tin.
