Tap a step to highlight it, or turn on Cook Mode for large type and step-by-step focus.

  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan). Spread the sausages on a lined tray, brush with the oil and bake for 15 minutes.

  2. Mix the honey, mustard and soy sauce in a large bowl.

  3. Drain off any fat from the tray, tip the hot sausages into the bowl and toss to coat.

  4. Return to the tray and bake for 5 minutes more until sticky and dark at the edges.

What Can Go Wrong

  1. Drain the fat before glazing so the sauce sticks.
  2. Line the tray with paper; the glaze is hard to scrub.
  3. Watch for the last minute to avoid burning.

The Short Version

The glaze is the whole point, and it is made from three things: honey, mustard and a splash of soy. Together they are sweet, sharp and salty, and they stick to anything that comes out of the oven.

Bake the sausages first on their own, 15 minutes at 200°C, until they start to brown. They give off fat which you drain, so the glaze sticks instead of sliding off.

Toss them in the glaze while they are still hot. The heat thins the honey and it coats every sausage in a single stir.

Return to the oven for 5 minutes, until sticky and dark at the edges. Watch them for the last minute: honey goes from caramel to burnt quickly. Serve them warm with cocktail sticks. Cocktail sausages are inexpensive in the freezer section, and the glaze gives them a party feel. Keep them warm in a low oven, and put out cocktail sticks and a napkin for each guest.
