Honey Soy Baked Chicken
Chicken thighs and drumsticks marinated in honey, soy, garlic and ginger and baked until the skin is lacquered and sticky. A tray-bake with rice.

Whisk the soy sauce, honey, garlic, ginger, rice vinegar, vegetable oil and sesame oil in a large bowl. Add the chicken, turn to coat, cover and marinate in the fridge for at least 30 minutes.

Heat the oven to 200°C / 400°F. Line a large roasting tin with baking paper.

Arrange the chicken skin side up in the tin, in a single layer, with a little space between the pieces. Pour the marinade over the top.

Bake for 25 minutes. Baste the chicken with the juices from the tin.

Bake for 15 to 20 minutes more, until the skin is dark and sticky and a thermometer in the thickest part of a thigh reads 74°C.

Rest for 5 minutes. Spoon the juices over the chicken, scatter with the spring onions and sesame seeds, and serve with steamed rice.
