Method

  1. Line a 20 cm square tin with parchment paper and lightly oil it. Measure the bicarbonate of soda into a small bowl next to the stove, with a whisk within reach. Have a candy thermometer ready.

  2. Put the sugar, golden syrup and water in a large, deep, heavy saucepan over medium heat. Stir until the sugar dissolves, then stop stirring.

  3. Boil, without stirring, for 8 to 10 minutes, until the syrup is a deep amber and the thermometer reads 150°C.

  4. Take the pan off the heat and quickly whisk in the bicarbonate of soda for a few seconds, until just combined. The mixture will foam up violently.

  5. Pour it at once into the tin. Do not spread it or tap the tin, or the bubbles will collapse.

  6. Leave to cool completely, about 1 hour, until hard, then lift out and break into pieces with the back of a knife.
