Whisk the cornmeal, flour, baking powder, sugar, salt and cayenne in a large bowl.

Whisk the buttermilk and egg together, stir in the onion and spring onions, and pour into the dry ingredients.

Stir just until combined into a thick batter. Do not overmix.

Heat the oil to 175°C / 350°F in a deep pan.

Drop tablespoons of batter into the oil, 6 at a time, and fry 3 minutes, turning once, until deep golden and puffed.
