  1. Bring the water to a boil in a saucepan and take it off the heat. Add the tea bags and the bicarbonate of soda, if using, and leave to steep for 5 minutes.

  2. Lift out the tea bags without squeezing them. Stir the sugar into the hot tea until it dissolves.

  3. Pour the tea into a large jug, add the cold water and stir. Chill it if you have time. If you do not, the ice in the glasses will do the job.

  4. Fill 6 tall glasses with ice, pour in the tea and add lemon slices and a sprig of mint to each.
