Making Indonesian Gudeg

  1. Put the jackfruit, coconut milk, water, tea, shallots, garlic, coriander, galangal, bay leaves, sugar, soy sauce and salt in a heavy pot.

  2. Bring to a simmer, then cook with the lid slightly open for 60 minutes, stirring occasionally.

  3. Add the chicken and eggs. Continue to simmer for 80 minutes, until the chicken is tender, the liquid has reduced and the jackfruit is dark brown and soft.

  4. Serve with rice, a spoon of the thick sauce and sambal.

Tips for Success

  • Rinse the canned jackfruit well to remove the brine.
  • Stir gently to keep the jackfruit pieces whole.
  • Serve with something hot and sour to balance the sweetness.

Some Background

Sweet is the surprise. A plate of gudeg is not a spicy Indonesian dish but a sweet and savoury one, brown with palm sugar and soy sauce, soft with coconut milk and long cooking. It comes from Yogyakarta, and one portion arrives with rice, a boiled egg, chicken and a fiery sambal krecek that keeps the sweetness in check.

The base is young jackfruit, sold in tins (in brine, not syrup) in Asian shops. Drain it, rinse it well, and squeeze it out. The pieces take up flavour like a sponge. Without bay leaves, galangal, shallots, garlic and coriander the dish would be sweet and nothing else. Add teak leaves if you can find them. They give the traditional colour; strong black tea is a practical substitute.

The jackfruit simmers in coconut milk and water with the aromatics, palm sugar and a little salt. The chicken thighs and eggs join it after an hour. Cook gently with the lid ajar for 2 hours, stirring only occasionally. The liquid reduces and the jackfruit turns a dark, glossy brown.

Serve with the rice, chicken, egg, a spoon of the thick cooking sauce and a little sambal.

Changing the Recipe

  • If coconut is a problem, a cooking cream (dairy or plant-based) can stand in for the coconut milk in a sauce; the dish will lose the coconut flavour and taste noticeably different.
  • An eighth of a teaspoon of garlic powder per clove is the stand-in usually given when you are out of fresh garlic; it will not brown the same way, and it burns easily, so add it with the liquid.
