A bolognese needs two hours on the hob to turn rich and soft. Under pressure the flavours blend in 15 minutes, but the sauce still needs the same first steps to be good.

Brown the mince hard on the sauté setting. Do not stir it for the first 4 minutes, so it can form a crust. The deep brown flavour comes from this step, and pressure cooking cannot add it back.

The soffritto of onion, carrot and celery goes in next and softens in the beef fat for 5 minutes. A spoon of tomato purée fried until it darkens adds a savoury depth.

Keep the liquid low. A pressure cooker does not reduce a sauce, so use a tin of tomatoes and a small splash of water. After cooking, boil on the sauté setting for 5 minutes if the sauce is loose. Stir through the pasta, with a little pasta water. The sauce makes a good lasagne filling or a topping for baked potatoes, and portions freeze well, so a full pot is worth making.
