Making Instant Pot Chicken Soup

  1. Set the pot to sauté. Heat the oil and brown the thighs, skin side down, for 5 minutes. Lift out.

  2. Cook the onion, carrots and celery for 4 minutes. Add the garlic for 1 minute, then the water, bay leaves, thyme and salt. Put the chicken on top.

  3. Lock the pressure cooker lid and pressure cook on high for 10 minutes. Release the pressure naturally for 10 minutes.

  4. Lift out the chicken, shred the meat and discard the skin and bones. Add the noodles to the broth on sauté and cook for 6 minutes, then return the chicken, add the parsley and serve.

Behind the Recipe

A soup that tastes as if it had simmered for hours takes 10 minutes under pressure, because the pressure forces flavour out of the chicken bones and into the water.

Bone-in chicken thighs give the best broth. Brown them first on the sauté setting, skin side down, for 5 minutes, and the soup has a deeper flavour. Take them out, soften the onion, carrot and celery in the fat, and put the chicken back on top.

Use enough water to cover the thighs and no more. The pot does not lose liquid, so a pot filled to the brim gives a weak soup.

After pressure cooking, lift the chicken out, pull the meat off the bones and discard the skin and bones. Add the noodles to the hot broth on the sauté setting and cook for 6 minutes. Return the chicken for the last minute. A squeeze of lemon and plenty of black pepper at the end make a plain broth taste fresher, and leftover shredded chicken is good in sandwiches.
