  1. Heat the oven to 200°C / 390°F (180°C / 355°F fan). Prick the potatoes, rub with the oil and salt and bake directly on the shelf for 1 hour until the skins are crisp.

  2. Warm the beans in a small pan for 5 minutes over medium heat.

  3. Cut a cross in the top of each potato, squeeze open, and add the butter.

  4. Spoon over the beans, scatter with the cheese and pepper, and serve at once.

What Can Go Wrong

  1. Bake the potato unwrapped for a crisp skin.
  2. Cut the cross as soon as it comes out of the oven.
  3. Drain the beans slightly if they look very thin.

The Short Version

Short, sharp: bake it for an hour. Anything quicker gives a potato that is cooked but pale, without the crackle in the skin that makes a jacket potato worth the wait.

Rub the potato with oil and salt, and put it directly on the oven shelf. A baking tray insulates the base, and a potato wrapped in foil steams and loses its crisp.

Split it open as soon as it comes out. Trapped steam makes the inside gluey, and a cross cut lets it escape and keeps the flesh fluffy.

Butter goes in first. Then the beans, heated in a pan and drained slightly so they do not flood the plate. Cheese melts on top from the heat. Black pepper is the only seasoning needed. It is the plainest of suppers, and worth an hour in the oven. Several potatoes can bake at once for very little extra cost, so cook more than needed and use the rest as the next day's base.
