  1. Pound the pork to 1 cm thick and season with the salt and pepper.

  2. Coat each cutlet in the flour, then the egg, then the panko, pressing the crumbs on.

  3. Heat the oil in a frying pan over medium heat and fry the cutlets for 4 minutes per side until deep gold. Drain on a rack.

  4. Spread the bread with the butter and mustard. Fill with the cabbage and cutlets brushed with the sauce, press gently and trim the crusts.

  5. Cut each sandwich in half.
