  1. Heat the oil in a large frying pan over medium-high heat. Add the potatoes, cover and cook for 5 minutes, then uncover and cook for 8 minutes more, turning now and then.

  2. Add the kielbasa, onion and pepper and cook for 6 minutes until the sausage is browned and the potatoes are crisp.

  3. Stir in the garlic powder, paprika and salt.

  4. Scatter with the cheese, cover for 1 minute until melted, and serve from the pan.

Things to Watch For

  1. Cover the potatoes at the start to soften them, then uncover to crisp.
  2. If the potatoes stick, leave them a minute longer before turning.
  3. Cut the potatoes small and even so they cook at the same pace.

Good to Know About Kielbasa Potato Skillet

A supper for a table of four on a night when nobody wants to cook. The smoked sausage is already cooked, the potatoes are cut small, and everything finishes in one pan in half an hour.

The potatoes are the slow part. Cut them into 1 cm cubes and start them first in a hot pan, covered for the first 5 minutes so the steam softens them, then uncovered to crisp.

The sausage joins them once the potatoes are tender. It needs only 4 minutes to brown.

Take the lid off for the final stretch. A closed pan steams everything and leaves the crust soft. Melt the cheese over the top for 1 minute. A lid for that minute is fine. Because the sausage is already cooked, this is among the fastest dinners in the book and uses a single pan. A fried egg on top of each portion makes it a more substantial meal for very little extra cost.
