A Little Background
Next to a French onion dip, the Kiwi version is paler, creamier and a good deal more relaxed: a bowl of soured cream and cream cheese with onion cooked down until soft and sweet, set out with potato chips at any summer barbecue. It does not take long to make, and it tastes better after a rest in the fridge. Make it ahead.
The onion is what turns it from a plain sour dip into a rich one. Cook it slowly in butter over a low heat until it is soft, translucent and just beginning to colour, about ten minutes. Cool the onion completely before it goes into the cream. Hot onion thins the dip and can turn the soured cream grainy. Slow cooking is the key.
Beat the cream cheese until smooth, fold in the soured cream, the cooled onion, garlic powder, chives and a squeeze of lemon, and season. Chill for at least an hour so the onion flavour spreads through. Stir again before serving, and keep it in the fridge until the last moment. Potato chips are the classic partner.
