Stir the sugar into the boiling water, add the mint and vinegar and leave to stand.

Why the Method Works
Most mint sauce is too sweet, and the fix is to make your own: it takes minutes and tastes of vinegar and mint, as it should.
Chop the mint finely and pour over a little boiling water with the sugar to dissolve it, then add the vinegar. Leave it while the lamb cooks and the flavours come together.
Lamb cutlets have a bone to hold and a rim of fat that crisps. Season them with salt and pepper and cook in a hot pan or under the grill. Do not move them for the first 4 minutes, so a proper crust forms.
Turn once and cook for 4 minutes more for pink, a little longer for well done. If your grill runs hot, check at 7 minutes. Rest for 3 minutes on a warm plate. Spoon the sauce over just before serving, not before. Cutlets cook quickly, so have the potatoes and vegetables ready first, and bring everything to the table together.
