Heat the oven to 160°C / 320°F. Brown the shanks in the oil in a large casserole on all sides, then set aside.

Fry the onion, carrot and garlic for 6 minutes. Add the tomatoes, wine, stock, rosemary and salt and bring to a simmer.

Return the shanks, cover and cook for 2 hours 30 minutes, turning once, until the meat falls from the bone.

Lift out the shanks and boil the sauce for a few minutes if thin. Serve the shanks with the sauce spooned over.
