  1. Rinse the lentils. Soften the onion and carrot in 2 tbsp of the oil for 8 minutes, add the garlic and cumin for 30 seconds.

Shorbet adas is the soup that Lebanese families cook in winter, and one of the cheapest and most comforting things you can make. It is thick, golden and warmly spiced, and a squeeze of lemon makes it sing.

Soften the onion and carrot in oil for 8 minutes, until sweet. Add garlic and cumin and stir for 30 seconds. Rinse the lentils well, since the cloudy water that comes off carries dust and makes the soup foam.

Add the lentils and stock, bring to the boil and skim off any foam. Simmer for 25 minutes until the lentils collapse into a soft mush. If your hob runs hot, check at 20 minutes and stir often.
